Curtis Eakins, N.D. is Co-Health Ministry Director of South Central Conference of Seventh-day Adventist and Health Seminars Unlimited, Inc. Curtis has stimulated audiences throughout North America to achieve optimum health for over twenty years. Curtis has worked at the Huntsville Hospital for nearly ten years. While there, he gained a comprehensive knowledge of the gastro- intestinal tract and its prevention, causes and restoration of diseases. Furthermore, he become a Certified Surgical Technologist, assisting surgeons in hundreds of surgical procedures. Curtis became a Naturopath from the Trinity College of Natural Health. Also, Curtis is the author and publisher of the lifestyle book called Natural Alternatives and has developed and implemented along with Paula the Abundant Living Series which include DVD'S and PowerPoint slides for groups sessions on major health concerns.
Paula Eakins, M.S. is Co-Health Ministry Director of South Central Conference of Seventh-day Adventist and Health Seminars Unlimited, Inc. Paula, also known as "The Tofu Lady" has thrilled individuals across this nation and abroad, delivering unprecendented cooking exhibitions in a fresh and lively way for over twenty years. Paula received her Bachelor of Science and Master of Science degrees from San Francisco State University and Alabama A&M University in the area of Foods and Nutrition. In Addition, Paula taught as a professor at Oakwood College for over five years in the area of Nutrition and Dietetics. Furthermore, Paula has been the volunteer speaker for such organizations as the American Cancer Society and the American Heart Association. Also, she is an active member of the American Dietetic Association for over fifteen years. Moreover, Paula has produced and published two popular and effective cookbooks entitled: Vegetarian Cooking Made EZ and Global Vegetarian Cooking Made EZ.
